Happy weekend! Hope you had a fantastic July 4th. I spent it painting our new house, bingeing the new season of Stranger Things 😁, and cooking up some balsamic steak gorgonzola salad with grilled corn.

I recently realized it's beentwo years since I shared a steak salad here. TWO YEARS! Absolutely ridiculous considering how often I eat them 🤣. Especially during the summer months!

The main ingredients of this particular steak salad are...you guessed it! Grilled steak and grilled corn. No oven or stove needed! Keep the heat outdoors with this delicious entree salad.

Other realizations I've had since I made this balsamic steak gorgonzola salad:

First, I love grilled corn...as in LOVE grilled corn. It's so easy to make and it just screams summer doesn't it?

Second, grilled steak is FAN-tastic because it takes less than 10 minutes to cook. Major points there.

Third, salads. Salads all day every day all summer long. You with me?

Fourth, this balsamic steak gorgonzola salad with grilled corn combines ALL of those things. The ultimate win! Now if you'll excuse me, I need to finish Stranger Things season 3 before the spoilers rampant on the internet ruin my life. Recipe coming right up!

Description

A 20 minute, delicious steak and salad dinner recipe with tomatoes, red onion, home grilled corn, gorgonzola cheese crumbles, gremolata and balsamic vinaigrette. Perfect for the summer grilling months!

Ingredients

For the Marinade

  • 1 lb sirloin steak
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • ¼ cup extra virgin olive oil
  • ½ teaspoon dijon mustard
  • ¼ teaspoon garlic powder
  • ½ teaspoon coarse salt
  • ¼ teaspoon ground black pepper

For the Salad

  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 4 ounces Gorgonzola cheese, crumbled
  • 2 heads endive lettuce, outer leaves removed, halved and roughly chopped into 2 inch pieces
  • 6 cups mixed spring greens
  • 1 corn on the cob, husk removed
  • 1 tablespoon extra virgin olive oil, for drizzling corn

For the Gremolata

  • 2 tablespoons basil leaves, minced
  • 2 tablespoons parsley, minced
  • 1 clove garlic, minced
  • 1 tablespoon lemon zest

For the Balsamic Vinaigrette

  • 3 tablespoons balsamic vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon dijon mustard
  • Dash of salt and fresh ground black pepper

Instructions

  1. Marinate the steak: In a medium size bowl, stir together ingredients for the marinade. Place steaks in a large ziplock bag. Pour marinade over the steaks, seal the bag, and shake to coat. Chill in the fridge for 30 minutes.
  2. Make the gremolata: Combine the basil, parsley, lemon zest, and garlic in a small bowl. Set aside.
  3. Preheat a cast iron grill pan at medium-high heat or an outdoor grill. Drizzle corn on the cob with 1 tablespoon olive oil and liberally sprinkle salt and pepper. Using tongs, place on the heated grill. Cook each side until grill marks form on the corn kernels and they are somewhat softened, about 10 minutes total. Remove from heat when done and let cool. Slice corn kernels off the cob.
  4. Remove the steak from the fridge. Place on the grill or grill pan. Grill both sides 4-5 minutes for rare to medium rare. Remove steak to a plate and let rest for five minutes. Slice thinly against the grain.
  5. In a small bowl, whisk together ingredients for vinaigrette.
  6. Toss together half of the vinaigrette, half of the gremolata, mixed greens, endives, tomatoes, gorgonzola, sliced corn, and red onion in a large bowl.
  7. Lay sliced steak on top of salad. Drizzle steak and salad with gremolata and remaining vinaigrette as desired.

    Easy Meal to make. My husband wanted a salad for dinner and I searched for a “Good” dinner salad. Worked well, I substituted greens and instead used half a head of iceberg. Hubby even enjoyed the vinaigrette

    I can’t wait to make this, it looks absolutely incredible! How do you manage to get the bunch chunks of corn as you cut them off the cob? Mine always just crumbles into individual kernels.

      Use a knife with a 5-6 inch blade. Cut a little closer to the cob and you’ll find the corn stays together in a clump more than in single kernels. Sharpen those knives! You can’t beat a Japanese knife (Miyabi).

    Fabulous dish! Our entire family loved it! Will for sure make it again--many times! Such an easy meal. I prepared each part ahead of time, including marinating the steak. Took it all to my son's home. He grilled the steak and sliced it. I simply put the delicious components together on a platter. It was as delicious as it was beautiful!

    My wife doesn't like gorgonzola so I used feta which was fine. Also, I did the steaks sous vide. That came out great with the marinade vacuum sealed for a slow cook at 140degrees for 8 hours.

      Absolutely! Chicken would be delicious. When you grill the chicken just make sure it's cooked all the way through (temps at 165˚F).

    Made this on a whim so had to sub some instruments but it turned out delicious nonetheless! Subbed blue cheese, added avacado, and honey to the vinaigrette. It's also the middle of winter so I pan-browned frozen corn which worked well. I'll definitely be adding this to my regular rotation.

    This was amazing! I have always marinated my flank steak this way and grill it for 5-6 minutes per side. Adding the rest of these ingredients was fantastic. My family really enjoyed it.

    Could I marinate the steak longer--say 3 or 4 hours? Normally I know this wouldn't be an issue, just wondering if it's better with a quick marinating time. Trying to plan ahead of a busy day!

    I'm confused about what to do with the "other half" of gremolata & dressing (?) Pour it over the steak? Separately? And you add dressing AND gremolata to the greens? That won't taste weird? I'd like to try this but not until the directions are more clear. Thank you

    That was delicious!!! I used feta instead of gorgonzola (store did not have any) and I added avocado, bell peppers and carrots. That dressing is amazing. This will for sure be on my weekly rotations! yum! Gonna use chicken next time!

    This was a great summer salad. I cut the olive oil down to 3 T. In both the marinade and dressing, which worked out well. I also substituted blue cheese for Gorgonzola, because that’s all I had. My husband loved this too - said it was a keeper! Thanks!

    Made this salad for a summer picnic and it was a huge hit! The steak, corn, cheese combo is fantastic with the dressing. I added a little honey to the balsamic since I like it a little less tangy. Will be adding this into the summer menu rotation.

    Though the flavors were good, I think there were just too many. The perfect bite (with all ingredients in one bite) did not allow you to taste each item. I’d cut out the endive for something less bitter, more Gorgonzola, and maybe a dairy based (thinking crème fraîche) dressing to mix the Gorgonzola with.

    This was SO good and easy to make. I didn’t have endive, but followed recipe otherwise (I did double it). Used flank steak and marinated for only 30 minutes-great flavor. Definitely will be only regular rotation!

    Wow, what a great salad. I cannot wait to make again. Used what I had so that was arugula in place of endive and blue cheese in place of gorgonzola. I have very good quality balsamic and EVOO so dressing was fabulous as was the garden tomatoes, basil and parsley and farm fresh MN corn. Still thinking about it a couple of nights later. YUM. Thank you.

    YO.......

    I substituted the cheese (I had feta, so I used that), and I hate tomatoes so I substituted red bell pepper. I put garlic salt on the corn (which in retrospect should have been garlic powder because it was a little salty) and I accidentally bought cilantro instead of parsley, so I omitted it entirely. It was delicious! My husband has been gone for five weeks for work, he'll be home this week and I definitely plan on making this for him.

    Delicious! Made this with both shrimp and steak. I would skip the endive next time as it was quite bitter. Maybe sub with radicchio or arugula. We added some avocado and grilled the opinion but all the rest was as listed.
