I am a true beef lover. Steak is my thing. A secret, as healthy as I live my life the difference between a grass-fed steak and a prime cut of meat is undeniable. Prime is far more tender, grass-fed tends to be tougher. I didn’t know what parmesan crusted was but once I heard I had to try it. I took a trip down to the famous steakhouse and tried it. Blown away with the flavor I knew there was a way to recreate it. Simple and easy this flavor packed crust is even a great choice for anyone on keto or the low carb diet.

How To Make Parmesan Crusted Steak Recipe

Ingredients Needed

  • Grilling Steak (NY strip steak, ribeye, filet mignon or top sirloin)
  • Ranch Dressing
  • Parmesan Cheese
  • Panko Bread Crumbs
  • Butter
  • Garlic Powder
  • Salt & Black Pepper

Cooking the steak & Broiling the crust

First, make the mix for the parmesan crust. The secret? It’s ranch dressing, combine your parmesan cheese with ranch and it cranks up the richness of parmesan.

Store bought or homemade is fine. I used a homemade ranch dressing and mix with a freshly grated parmesan cheese.

Next, you’ll need some breadcrumbs. If on the keto diet you can skip the breadcrumbs. But, even with the breadcrumbs the net carbs are only 5g per steak. Keto instructions below in recipe tips.

Combine breadcrumbs with parmesan cheese and butter. Set your crust topping to the side while making steak.

Cook your steak, searing both sides in a cast iron skillet or a stainless steel pan. Cook just shy of desired temperature.

Then, when steak is approaching desired temperature remove and add parmesan topping. Then place in broiler until crust has brown which will take 1-2 minutes.

Rest no more than 5 minutes due to the crust. If you let your steak rest too long the crust will get cold.

Helpful Recipe Tips

  • For keto, skip the breadcrumbs and the addition of butter. Simply use the ranch dressing and the parmesan on top. You can even use sliced parmesan over grated such as I did in my steakhouse creamed spinach.
  • Freshly grated parmesan. do not use the parmesan sitting on the shelf. Either grate your own with a blender or at the minimum get grated parmesan from a cheese department such as Whole Foods has. You’re going to want the cheese to melt properly because if it doesn’t it’ll be grainy.
  • Use any cut of steak you like. I use top sirloin for picture purposes but I am a ribeye guy.

How Do You Get A Crust On Steak

Although it seems difficult it is very easy. High heat is the key it won’t happen without it. I have a Kalorik infrared steak oven that cooks at 1500ºF. I get an amazing crust but everyone doesn’t have this type of machine at home. My secret to a steak crust on the stovetop is a cast iron skillet or stainless steel pan.

Reverse sear would be the key if you have a very thick steak. Place the steak in the oven at a low temperature like 250ºF, sous vide or smoker to bring it shy of the desired temperature. Remove it and allow it to rest fully. This is the key because not letting it rest you will shoot past the temperature you want.

When done resting at least 15-20 minutes grab your pan. Crank the heat to at least 400ºF in the pan. Allow the pan or skillet to start to smoke a little then add a little oil and immediately add the steak. Leave the steak on each side for a minimum of 90-120 seconds. You will have a crispy crust and a delicious steak.

When making a parmesan crusted steak or any meat the parmesan works well when it’s mixed with breadcrumbs. Something to note parmesan is a hard cheese and doesn’t melt well like soft cheese. Which is why it’s able to form the crust it does.

Ingredients

  • 1.5 pounds Top sirloin steak (or steak of choice)
  • salt and pepper to taste
  • 1/4 cup ranch dressing
  • 1/4 cup grated parmesan
  • 2 tablespoon breadcrumbs
  • 1 tablespoon unsalted butter
  • 1 teaspoon garlic powder

Instructions

  • Make crust mix before cooking steak. Take 2TB of grated parmesan and mix into 1/4 cup ranch dressing.

  • Combine breadcrumbs, garlic powder and 2TB parmesan cheese. Melt butter then pour in and mix around until everything is saturated. Put breadcrumbs and dressing to the side preparded to top steak.

  • I had 3 steaks at a total weight of 1.5 pounds. Top sirloin cut but any cut is fine. Salt and pepper steaks to taste.

  • Preheat oven to broil. Cook steaks just shy of desired done temperature. Top steak with dressing then place buttered breadcrumb mix on top. Put in preheated broiled oven for 1-2 minutes or until crumble topping has browned.

  • Allow to rest shortly due to the crust. The crust will get cooler much quicker than the steak.

Best Steak Cooking Methods

  • Season steak with salt and pepper
  • Preheat oven to broil
  • Place a cast iron pan on highest heat setting on stove then allow a light smoke to start. If steak is thick you will want to cook at a medium high heat to allow the heat to penetrate to the center.
  • Add a little oil to the pan then immediately place steak in.
  • Cook steak for 90-120 seconds on each side depending on steak thickness and desired doneness. There will be a lot of smoke. Do not flip before 90 seconds is reached.
  • Put in oven under broil allowing the steak to come up to temp. Follow preceding steps above. An example if you like steak rare which is about 125ºF pull steak out at 120ºF to add parmesan crust before placing back into oven. Note, I use a meat thermometer.
