How To Make The Eggnog Cookie Bars

  1. Heat oven to 350 degrees. Lay a sheet of parchment paper over the baking pan. Make sure that there is extra paper hanging over the sides that you will be able to grab from later on.
  2. In the large bowl, combine the butter, brown sugar and white with the hand mixer on medium speed until light and fluffy.
  3. Then add the egg, vanilla extract, and eggnog to the butter and sugar and mix again.
  4. In one of the medium bowls, pour in the flour, baking powder, nutmeg, and salt. Gently whisk them together.
  5. Add the dry ingredients to the wet ingredients in increments and mix until you have a soft dough. Make sure to not overmix the dough to keep the cookie bars extra soft.

Ingredients

  • ½ cup butter salted or unsalted, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • cup eggnog
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

  • Preheat your oven to 350 then line an 8×8 inch square baking pan with parchment paper, leaving some overhang for easy removal.

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, which should take about 2-3 minutes.

    ½ cup butter, ¾ cup granulated sugar, ¼ cup brown sugar

  • Add the egg, eggnog, and vanilla extract to the butter-sugar mixture, and beat until well combined.

  • In a separate bowl, whisk together the flour, baking powder, nutmeg, and salt. Then add the dry ingredients to the wet ingredients and mix just until the flour mixture disappears.

    Can these eggnog bars be frozen?

      These cookie bars freeze beautifully. Once you frost them, chill them until the frosting is solid then slice and store in an airtight container and in the freezer for up to 3 months.
      Once you are ready to enjoy them, thaw them on a flat surface (think cutting board or plate) in the fridge overnight and enjoy!
