Take your beef to a new level with these tasty pan seared garlic butter steak bites. Perfectly cooked bite sized morsels of tender steak drenched in garlicky butter. No slaving over the stove for these, they’re ready in under 15 minutes.

Hey GyspyFans, it’s Jason. I haven’t posted in a while, but as I always cook for Valentine’s Day, Alpana wanted me to do our Valentine’s recipe this year. Though this one is so easy and delicious, it may become a weekly staple.

What are steak bites?

These tasty bites are just what they sound like, bite sized pieces of steak. They are cut before cooking.

Why not just cook the steak whole? Well, though we do love our basic grilled or seared steak, this method does have a few advantages. First of all, it cooks really fast. It’s also great if you have a sauce, like our garlic butter in this case. That sauce nicely coats those bite sized pieces.

The best part is, they always seem to come out right. Yeah, I’ve overcooked a few steaks in my time. But these always end up perfect.

What cut of steak to use

Today I’m using rib eye. It’s my favorite, tender and flavorful. Other options are New York strip, tenderloin or sirloin.

The single most important thing here is you want your skillet really hot. Otherwise, the steak just kind of… simmers. It’ll end up tough and won’t have that nice crust. So don’t be too hasty to cook those bites, let your skillet heat up first.

Speaking of skillets, I really recommend cast iron. If you don’t have one, you can use non-stick. But it’s worth rummaging around in the pantry for your cast iron.

These only take 4-5 minutes, so pay attention. This isn’t the time to be multitasking. Sear your steak bites 2 minutes undisturbed, give them a stir, 2 more minutes then get them out of the pan.

Don’t overcrowd the pan. Cook in batches if need be. You can afford the extra five minutes, but you can’t afford poorly cooked steak bites after bragging to your Valentine about what a nice dinner you’re cooking.

What to serve with these steak bites

They go great with steamed, roasted or sautéed veggies. Today, as you can see from the pictures, we had asparagus. Other options would be green beans, broccoli or zucchini.

Personally, I love a nice crusty bread to sop up that garlic butter. Alpana makes a great no knead bread.

Meat and potatoes is a classic combo. Try these bites with our goat cheese mashed potatoes.

I always like a salad alongside my steak. A basic green salad or caesar salad is great. If you want something a little fancier, try our zucchini carrot salad or Israeli couscous salad.

Want to double up on the fanciness factor? Serve them with a side of our cherry tomato gratin.

These also make a great, fancy looking, appetizer for parties and get togethers (remember those?). Just stick toothpicks in the bites and watch your guests go wild.

Garlic Butter Steak Bites

Yield: 4 servings

Cook Time: 10 minutes

Total Time: 15 minutes

Take your beef to a new level with these tasty pan seared garlic butter steak bites. Perfectly cooked bite sized morsels of tender steak drenched in garlicky butter.

Ingredients

  • 1.5 lbs steak (see note 1), cut into bite sized pieces
  • 1 Tbsp olive oil
  • 6 Tbsp butter
  • 4 garlic cloves, finely chopped
  • 1/4 cup parsley, chopped
  • Salt & pepper to taste

Instructions

  1. Heat oil in skillet over high heat. Once hot, add in steak bites and season with salt and pepper. (see note 2)
  2. Cook 2 minutes undisturbed. Stir and cook another 2-3 minutes. Remove to a plate.
  3. Reduce heat to medium and add butter to same pan. Once melted, add garlic and parsley and cook about a minute, stirring.
  4. Remove from heat. Add steak bites back into pan and toss well.

Notes

  1. My preferred cuts of steak for this dish are rib eye (which we used here), New York strip, sirloin or tenderloin.
  2. Don't overcrowd the pan. If need be, cook in batches.
