Wrapping the Filet Mignon in bacon is mainly to hold in the juices. It also provides extra fat and flavor to the filet if the Filet is seared properly.

  • 4 Beef Filet Mignon approximately 4-6 oz each, trim off any excess fat
  • 8 slices Bacon 1-2 pieces per filet
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  • First preheat your grill to 450 degrees F.

  • Wrap a piece of bacon around each of the filets and secure the bacon onto the meat with a toothpick.

  • Then season both sides of the filets with the salt and pepper.

  • Rub the grill grates with oil to prevent the sticks from sticking. Place the steaks directly on the grill and grill them for 5-6 minutes per side with the lid on the grill closed.

  • Then flip the steaks to their sides to grill the bacon around the outside of the steaks slightly. Grill for about 15-30 seconds per side until the bacon is crispy.

  • Then check the internal temperature of the steak with an instant read thermometer to check the temperature of the steaks. If the steak is not to the temperature that you prefer (see notes) then continue to cook for additional time until the internal temperature is the preference that you prefer.

  • Let the steak rest for 3-5 minutes, then slice, serve and enjoy!
