Melted warm milk chocolate, gooey toasted marshmallows and crispy graham crackers….what a perfect combination! Whoever invented S’mores (which is an abbreviation for “Some More”, because you can’t just eat one)was a complete genius! Though not attributed to one person, it is generally assumed that theS’more was invented by campers or vacationers and then shared from campfire to campfire.The first official recipe for S’mores was published in the 1927 Girl Scout handbook, which launched it into campfire history.

Traditionally the S’more is made by toasting a marshmallow or two over a fire, until warm and gooey, and then sandwiching it between two graham crackers and a milk chocolate bar. The roasted marshmallow melts the chocolate when being sandwiched, and wow, you’ve got yourselfa delicious treat.

Now you don’t have to have a roaring campfire to create this wonderful treat! You can have the yummy flavor of S’mores anytime with this recipe for S’mores Cookie Bars.

S’mores Cookie Bars Recipe

Ingredients:

  • ½ cup butter, room temperature
  • ¼ cup brown sugar
  • ½ cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • ¾ cup graham cracker crumbs
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 king sized milk chocolate bars
  • 1 ½ cups marshmallow creme/fluff (not melted marshmallows)

Directions:

Preheat oven to 350 degrees F.

In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at low speed until combined.

Divide dough in half and press half of dough into an even layer on the bottom a greased 8 inch square baking pan.

Place chocolate bars over dough, breaking the chocolate bars (if necessary) to get it to fit in a single layer no more than ¼ inch thick.

Spread chocolate with marshmallow creme or fluff.

Place remaining dough in a single layer on top of the fluff (easiest if you flatten the dough into small shingles and then lay them together).

Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.

These are best when heated, because everything inside is warm and gooey just like when you make them over the campfire. If desired, after you plate the barsyou can microwave them for about 10-15 seconds just before eating.
