If you’re looking to bite into some fall apart sirloin tip roast, this is the way to go! Use your pressure cooker to make sirloin tip roast Instant Pot style this week. Super tender with a dry rub and tons of flavor.

Ninja Foodi Sirloin Tip Roast

It doesn’t matter what brand you might have at home. We have made this in a Crockpot Express and as a Ninja Foodi recipe as well. The benefit to that one is you can air crisp it at the end. Use the same pot to cook under high pressure and brown the outside once the center is tender.

This and our Ninja Foodi roast beef not only make a great one pot meal but makes great leftovers too. We’ve made this meat cut a few different ways which we will share along the way but this is the quickest that will get the middle perfectly pink to slice and serve.

      • You should still deglaze pressure cooker after sautéing but it won’t have as many issues with this better liner.

For reference, this is the pressure cooker I have (a 6 quart) and use for all recipe creations.

This cut comes in slightly different shapes and sizes but typically this is what you’ll find. It may have butchers twine around it once or quite a few times. You can cook it as is or remove these beforehand, I like to take it off at the beginning to allow it to literally fall apart.

Same goes for cooking a sirloin tip roast slow cooker. If you remove it, once it starts breaking down it will allow the whole thing to just “relax” and pull apart nicely if you want it to do so.

Pressure Cooker Sirloin Tip Roast

Below is a sweet and savory dry rub recipe you could double if you wanted a thicker coat, or add half to cook and 2nd half to broil at the end. Mind you it is great right out of the pot, rested and sliced but if you’re a texture gal like me you may want to air fry or broil for a few minutes when done. You’ll need;

You can use your own combination if you have one that you love but the measurements for this simple one is below. For a thicker or to cover a larger piece just double the amounts. Keep in mind the size of the inside of your pot though when you make your purchase. About 2 pounds is just about perfect if you ask me.

You can see how much this coats so if you just want to lightly season this is good. If you want to make it spicy I suggest 1/2 tsp of dry Sriracha or red pepper flakes. Chili powder kinda’ works too but it isn’t my favorite choice of them all.

Instant Pot Sirloin Tip Roast

This is using a freshly butchered or defrosted piece. If yours is still rock hard you will need to use our Instant Pot frozen roast instructions instead. For this the rub won’t really stick so you’d have to add sauce or seasonings at the end.

If you want to add texture to the outside you can saute the outsides first with a bit of olive oil. Add some salt and pepper and flip until seared all over. Then turn off, add a bit of your water and scrape the brown bits off the bottom of the pot with a wooden spoon to deglaze the pot.

  • Mix your dry rub together and coat the outside of the roast on all sides. Place a trivet into your pot + 1.5 cups water or beef broth underneath.
  • Set meat on top of trivet, close lid and seal steam valve closed.
    • you could add large chunks of carrots and potatoes around the cut of meat that too so they can steam
  • Cook on high, pressure cooking for 50 minutes cook time with a 10 minute natural release. Then quick release rest of steam.
  • Lift out and slice.
  • You can make gravy out of the drippings by removing the trivet and turning pot to saute.
    • Spoon 4 tbsp of your hot liquid into a small cup + 1 tbsp of cornstarch.
    • Whisk until smooth and then pour that in.
    • Whisk contents as it boils until it thickens, then turn pot off.
  • If you want to create a crust on the outside you can place on a foil lined baking sheet. Set oven to broil and put it in there for 2-3 minutes just until outside browns.

You could add more of this or our tri tip dry rub beforehand to make it thicker and caramelized all the way around. I like this method the best vs. browning at the beginning. You can get it super tender all the way around, then add more rub and create the crust at the end.

How long to cook a sirloin tip quick roast?

For this you will need to set aside about an hour. If you include the time it takes to come to pressure initially it is closer to 1 hour and 20 minutes or so. Then you may choose to broil and make Instant Pot gravy at the end too. If you used an oven you can cook it quickly using a higher temperature such as;

  • Roast at 450 degrees F for 15 minutes.
  • Then you are going to reduce the heat to 300 F and roast until you get the internal temperature you want it to become
  • 135 F for medium rare,
  • 145 F for a medium cook
    • these will take 60-90 minutes depending on thickness and how pink you want it to be

If you do have the time I would highly recommend cooking this cut in your Traeger sometime! Smoked sirloin tip roast comes out tender with a crust on the outside this way.

How to Cook a Roast in Instant Pot

For more and more flavor whisk together this amped up bbq sauce and pour that over the top before slicing and serving. Make this one as spicy or mild as you want, or just use a bottled variety if you have a favorite one on hand. For homemade you’re going to want a small bowl, you will whisk together the following ingredients;

  1. ½ cup of bbq sauce
  2. 1 tbsp dried roasted garlic
  3. One tsp salt

How do you cut a beef sirloin tip?

This cut needs a very sharp knife to slice across the grain and shorten the fibers to get each slice to be tender. Once it is cooked and has rested for 30 minutes set it on a cutting board. Look at the top to identify the white small strands running from one end to the other. Slant your knife perpendicular to those and cut into 1/4 inch pieces to serve.

What can be made from left over roast beef?

First off you want to make sure that you save it correctly for best results. You want to keep air away from it so a freezer bag is best sucked flat. Keep the meat left unsliced and cut it when you want to reheat it. If you just want to warm it as is put it into a pan with a few tbsp of sauce or broth with a lid on it. It adds moisture and flavor the day after.

The thing we do most often is to slice into thin strips, put into a bowl with teriyaki sauce and then throw into the air fryer for 4 minutes at 400 degrees tossing half way. I have come up with a bunch of different leftover brisket recipes too that work with this cut as well. Casseroles are great options since the creamy sauce will bring moisture back to it.
