Sloppy Joe’s are a favorite at our house. I love the flavors but I am not a fan of how messy they are to eat. I usually end up eating them with a fork. Since I already eat my sloppy joe’s with a fork, I decided to make a sloppy joe casserole. OMG! This Sloppy Joe Sour Cream Rice Bake is SO good. Cream rice topped with sloppy joe meat and cheese. This is one of our favorite ground beef casseroles! It is super easy to make and tastes great! Make some green beans and rolls and dinner is done.
How to Make Sloppy Joe Sour Cream Rice Bake
As I said, this casserole is very easy to make with only a few simple ingredients. Start mixing together some cooked rice, sour cream, and cottage cheese. In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain excess grease. Add a packet of sloppy joe seasoning and tomato sauce. Simmer for 5 minutes. Spread the ground beef mixture on top of the rice. Top the casserole with cheese and bake.
Helpful Tips & Frequently Asked Questions
- I used white rice in this casserole. You can use any variety of cooked rice that you prefer – white, brown, jasmine. You could probably even try this with cauliflower rice to make this a low-carb dish.
- Feel free to add diced onion, red bell pepper, or green bell peppers to the meat sauce.
- Can substitute Manwich sauce for the seasoning packet and tomato sauce.

- You can use any cheese that you enjoy. Colby Jack, cheddar, or mozzarella cheese are all delicious.
- Can Sloppy Joe Casserole be made in advance?Yes! Assemble the casserole and cover with plastic wrap. Place the dish in the refrigerator and bake when ready.
- Can You Freeze Sloppy Joe Sour Cream Rice Bake? Yes! Assemble the casserole and cool completely. Cover the baking dish with plastic wrap and aluminum foil. Place the pan in the freezer and freeze.
- To bake the casserole after freezing, thaw completely overnight in the refrigerator and bake as directed below.
- To reheat the baked casserole after freezing, thaw completely overnight in the refrigerator. Either pop the casserole in the microwave or cover and bake at 350ºF for 30 to 40 minutes.
- Store leftovers in an airtight container in the fridge.

Sloppy Joe Sour Cream Rice Bake – easy weeknight ground beef casserole ready in under 30 minutes!! Rice, sour cream, cottage cheese topped with a quick homemade sloppy joe meat sauce and cheddar cheese. You can make in advance and refrigerate or freeze for later.
Ingredients:
- 1 lb lean ground beef
- 1 (1.31-oz) packet sloppy joe seasoning
- 1 (8-oz) can tomato sauce
- 3 cups cooked rice
- 1 cup cottage cheese
- 1 cup sour cream
- 1½ cups shredded cheddar cheese
Instructions:
Preheat oven to 350ºF. Spray a 9×9-inch baking dish with cooking spray.
Brown meat; drain off fat and return to skillet. Add sloppy joe seasoning and tomato sauce. Stir and simmer for 5 minutes.
Mix together cottage cheese, sour cream, and cooked rice.
Spread rice mixture into bottom of the prepared dish. Tpp with sloppy joe meat sauce. Sprinkle cheese on top of casserole.
.Bake uncovered for 20 to 25 minutes.
Notes:
Can substitute ground turkey for beef.
Can use low-fat sour cream or plain Greek yogurt in place of sour cream.
Can use white or brown rice.
Can make in advance and refrigerate or freeze for later.
If baking after freezing, thaw completely and bake as directed above.
